πŸ– Traditional Goat Fricassee

πŸ– Traditional Goat Fricassee is a Greek dish with greens and a white sauce made with eggs and lemon juice, called Avgolemono. It can be made with either lamb or goat and the addition of various vegetables varies, depending on the season.

For 2kg of meat I used:
πŸ₯¬ β€” 500gr of lettuce
- 300gr green onion
- 30gr of dill

πŸ“Recipe:

πŸ– In a big pot add 4–5 tbsp of olive oil, heat it up and roast the meat for 5 minutes. Add some salt & pepper 🌢️.

🚰Add 1,5L of water with some ground cumin. Spice as you wish & boil for an hour.

πŸ₯— Prepare the vegetables. Cut the green onion and dill in small pieces and the lettuce in large parts.

⏲️ Add them to the pot and cook for another 15 minutes.

🍳 For the Avgolemono πŸ‹

In a bowl, smash 4 egg yolks, juice from 2 lemons and some of its skin, salt & pepper. Stir, and add a tbsp of dill. Then, slowly add some of the hot water where the meat is cooking, until you’ve added 5 tbsp.

Remove the pot from the heat and slowly pour the Avgolemono in the pot, stirring constantly. Add the remaining dill and serve with some πŸ«’ olive oil and lemon πŸ‹.
